Section 4.7 of the Food Code calls for measuring sanitized food contact surfaces and utensils by an irreversible registering temperature indicator Thermostrip® DL is a self-adhering and waterproof color-changing label that measures the surface temperature of dish ware in dish washing machines. Using Thermostrip® DL on a dish surface with each wash cycle will provide a record that the proper sanitation temperature has been reached.

Thermostrip® DL success is the special adhesive backing that can not only withstand the full wash cycle but can also be simply peeled off at the end of the line and stuck on the weekly check-list, providing a permanent traceable record of the dishwasher's performance. Simply stick the label on a platter or container, put it in the dishwasher for a normal cycle and take the reading at the end. The result is irreversible, and the label can be stuck on your records.

    HEALTH CODE: 4-703.11 Hot Water and Chemical. After being cleaned, EQUIPMENT FOOD-CONTACT SURFACES and UTENSILS shall be SANITIZED in: (A) Hot water manual operations by immersion for at least 30 seconds and as specified under § 4-501.111; P (B) Hot water mechanical operations by being cycled through EQUIPMENT that is set up as specified under §§ 4-501.15, 4-501.112, and 4-501.113 and achieving a UTENSIL surface temperature of 71°C (160°F) as measured by an irreversible registering temperature indicator.
